Tofu Chocolate Pudding


 










Servings : 4
Time Taken : 15-30 mins
Ingredients:
1 packet Silken Tofu (firm)
2/3 cup semi-sweet chocolate chips
1 tbsp water
Method
  1. Combine the water and chocolate chips on top of a double boiler to melt.
  2. Bump up the chocolate chips to 3/4 cup for a more chocolatey taste.
  3. Stir until melted and the chocolate is smooth. Set aside.
  4. Meanwhile drain the water from the tofu and drop it in a blender.
  5. Puree until smooth.
  6. Add the melted chocolate to the pureed tofu.
  7. Give it another whirl in the blender until well combined.
  8. IMPORTANT STEP: Refrigerate this for at least 2 hours. The longer you keep it, better for the tofu and chocolate to mingle.
